Pressure Canner on just the right pressure so as not to blow up me and the house.

Just think how healthy I would be if I ate your home grown food instead of the cherry pinapple dump cake I am eating right now at 8am.

Hi Pam, I have never seen a pressure canner before!I suppose here we never have a glut of anything worth doing anything with.In the cold of winter when you open a can of your beans you will be able to relive summer days.

I agree, it's a great feeling to see those jars of vegetables you grew, picked and canned yourself. Thanks for naming my flower. I've always wondered what a may pop was. I'll be watching it to see what happens.

You guys are about 2 weeks ahead of us--in all the produce. Wegot our first mess of green beans today and we will be eating them for supper with our planned menu. They are always so good. Next week, I will begin canning beans. Mike did dig our potatoes todat, though. We only plant 6 hills--small space and no storage for veggies--tried our crawl space one year and everything froze--not good. So we just plant what we can use up. I have canned potatoes but they are not cheap to run. I always raw pack green beans. Usually add onions or/and garlic or /and dill--sometimes pickle spice. I also prefer smaller beans and can them whole, using wide-mouth jars. I'm a rebel that way!!LOL

I need help! I'm a northern gal with southern roots. My mom and dad were both born and raised in East Tennessee and moved to Minnesota back in the early 50's. They always gardened and we had green beans that Mom canned. I don't recall her ever using a pressure canner. She just cooked her beans good and long with side pieces of bacon and then canned them in a water bath. Is this a safe method? We never got sick doing this....but what exactly is the best way to do this, (I don't want to invest the money in a pressure canner first of all) and how exactly do you can southern style green beans? Is there a good recipe? I want that flavor I miss so much from my childhood. My parents are deceased now and a lot of good recipes (and wonderful gardening memories) went with them. I have recreated mom's soup mix...with tomatoes, onions, carrots, and okra. I use it for chili, beef stew, goulosh, and many other tomato sauced dishes. I just really want those green beans to taste southern. Help me if you're able please! Thanks in advance! Cheryl in MN P.S. I would also love a good corn bread recipe...she used a cast iron skillet, bacon drippings...and it wasn't a sweet corn bread. I can't find a good recipe for that either!

Paula, they are roma beans.

Petula, the garden has been a blessing this year.

Linda, I sometimes use a little pickle mix with vinegar in my beans too. Yours sound great.

Coast rat, the garden is not as big as it looks in the pictures.

Christy, the canner is a 7 quart canner. It can hold 7 quarts but I usually only put in 6 quart jars.

Cheryl, I don't know about the water bath on beans. I have always used the pressure canner on green beans.
