They weren't crazy about squash and I always had plenty of yellow squash growing in the garden.
I decided to experiment around with different way of preparing the yellow squash and came up with this recipe for Squash Patties.
All you need is squash, stuffing mix. I like the cornbread version mix better but any flavor of Stove Top or store brand stuffing mix will be fine.
1 egg.
Onion is optional.
I used 4 small yellow squash and cut them up, peeling and all. I like about 1/4 cup of cut up onion in with the squash. Add enough water to cover the squash. No salt. The stuffing mix will have enough spices.
Boil about 15-20 minutes . Drain the water out.
I use my potato masher and mash the cooked squash good.
Let the squash cool a few minutes.
You can add a little butter if you like.
Add the egg and stuffing mix.
I add about 1/4 cup more chopped onion.
Shape into patties.
Add a little vegetable oil in the skillet and brown each side of the patties.
The stuffing mix with all it's spices and squash go really well together.
You can use the squash patties either as a bread or side dish.
It makes around 12-14 patties.
They also freeze well.
My family always enjoyed squash patties. I hope yours do too!

It's a bit like my squash casserole. I slice the summer squash into the baking dish, drizzle with some melted butter, sprinkle seasoned bread crumbs all over it, then drizzle with more butter to glue it all together and bake til squash is tender and topping is crisp.
Sprinkling with Parmesan cheese is a bonus.

What a yummy recipe. I love squash and stove top. I have used a similar recipe mixing a small batch of cornbread batter and adding cooked and drained squash with some and fry it up. I will be cooking it up soon. Have a good day

I love finding new recipes to try! I love fried squash and squash casseroles. All my squash has died off, I will have to wait for the new I planted to come up before I can try.
I am always looking for a good squash recipe and will be trying this. Thank you! One of my favorites is extremely simply. I cut up and boil 6 to 8 squash until they are tender, drain the water and mash just like you would mashed potatoes. Then I pour them into a cast iron skillet, add a BIG spoon of butter, about half a can of evaporate milk (or more to make it pretty juicy), salt and pepper to taste, then let cook down, stirring often until they are the consistency of mashed potatoes. I love to eat these piled on a hot biscuit, yummmmmmm!
We are going to have plenty of squash soon so this recipe will be great to try, thanks for sharing!
OK...now I have to go get some squash! My hubby and kids will not eat squash...I bet they will eat this! Especially if I do not tell them what is in it..!
That's a lot of comments in such a short time! I'll have to try that. I have giving my squash away because you can only eat so much grilled or fried squash. I wouldn't mind trying something different like that.

Love your Squash patties, sounds and looks sort of like the salmon patties my Mother use to cook. I do not have the stuffing on hand, but have the squash. Think I try and do them how I make my cornbread dressing and the salmon patties. Thanks for a great idea! Sounds wonderful, for I love fried squash.

My favorite squash recipe is from my grandmother. Slice squash and boil until tender. Drain all the liquid that you can. Add a bit of butter, splash of milk, and some coffeemate creamer. Mix well. Season to taste. Yummy!
Never had a squash pattie but I grew up on tuna patties. Time to try somethin' new!
